You will need
- 12 cups peeled and choppes zucchinis
- 4 large onions diced
- 2 large red peppers chopped
- 2 large green peppers chopped
- Soak overnight in 1/4 cup of salt. Rinse and drain in the morning.
- Add 8 cups of chopped tomatoes. Mix together
Mix well:
- 3 small can tomato paste
- 2 tsp garlic powder
- 2 tsp dry mustard
- 2 tsp cumin
- 1 tsp chili powder
- 1 cup brown sugar
- 3 Tbsp cron starch
- 3 cups white vinegar
Start boiling the second mixture and then add the zucchini mixture and when it returns to the boil, time 30 minutes, than bottle in sterilized Mason Jars
Boil the sealed mason jars, covers by 1 inch of water in a large pot for at least 1/2 hour (30 minutes)
This salsa is delicious, served with cream cheese and scoops chips. Make 12-13 Mason Jars.
You may also substitute the onions with leek. Enjoy!
